3. We also pre-boil the eggs and, after they have cooled, cut them into half rings. We also put the eggs in the salad bowl.

4. Chop the green onions and dill.

5. Grate the cheese on a coarse grater.

6. By this time the squids have cooled down, cut them into thin strips and add to the salad.

We will need:

  • soy sauce - 7 tbsp. l.
  • vegetable oil - 5 tbsp. l.
  • rice vinegar (can be replaced with regular table vinegar) - 2 tbsp. l.

  • garlic - 2 cloves
  • sesame - 1 tbsp. l.

As you can see, salads with squid are easy to prepare. Although I must admit that I have not cooked them before, I thought that processing squid was a difficult task. Imagine my surprise when I first bought and cleaned them. It turns out that everything is very simple. But you still need to know some subtleties.

How to properly cook squid for salad so that it is soft

Squids are healthy because they consist of 20% protein. But it is precisely this quality that presupposes certain features of their preparation. The fact is that during prolonged cooking, the protein coagulates, which makes the squid as hard as rubber and unsuitable for consumption. Therefore, in order to cook soft squid for a salad, you need to adhere to the following rules:

  1. When buying a carcass, choose a white carcass, pay attention to the freshness of the smell. Carcasses should not stick to each other.
  2. Before cooking, you need to clean the squid as thoroughly as possible so that no films remain. Otherwise, hard lumps may form on the surface of the carcasses.
  3. The easiest way to remove membranes from squid is to pour hot water over the carcasses and leave for a few minutes. The film then comes off easily and is removed.

4. Be sure to remove the chitinous cartilaginous chord inside the squid fillet. Simply separate it from the carcass and remove all solid particles with your hands.

5. After cleaning the squid, boil them in salted water. In this case, after boiling, cook for no more than 2 minutes, even better 1.5 minutes. At the same time, do not leave the pan, but strictly monitor the time.

6. When the time is up, immediately remove the squid from the pan and place in a colander.

7. For 1 kg of fresh squid you will need 2 liters of water and 2 tbsp. l. salt.

8. For more flavor when cooking, add 2 tbsp to the pan. l. sugar, bay leaf, black peppercorns and 1 tbsp. l. vinegar.

9. Another reliable way to prepare soft squid for salad is to pour boiling water over them 2-3 times. This method is considered more reliable, since there is no danger of overcooking the squid. This filling is enough to prepare the squid for consumption.

10. If you missed the moment, overcooked the squid for more than 2 minutes and it became tough, don’t despair - you can save it. They will decrease greatly in volume, but after 30 minutes of cooking they will become soft again.

This will make it very easy to remove the films from the carcasses - they will literally slide off on their own. So, clean the squid, wash it and put it in boiling water for 4-5 minutes. Combine all ingredients and season with mayonnaise. Mix well. Decorate with cucumber and herbs and serve.

Canned squid salad

Using canned squid significantly speeds up the process of preparing the snack.

  • sausage cheese - 200 gr;
  • canned squid - 1 can;
  • boiled egg - 3 units;
  • garlic cloves - 1 unit;
  • mushroom spice - a couple of pinches;
  • mayonnaise - 2-3 table. l.

Grate the sausage cheese. The squid, as a rule, is already chopped, and you just need to add it to the cheese shavings. If the squid fillets are not chopped, drain the brine from them and cut into small cubes. Pass the garlic through a press and finely chop the eggs. Combine everything, season and add sauce. Stir and serve.

Just a note. Canned squid is quite salty, so there is no need to add additional salt to the prepared salad.

With cheese and shrimp

  • peeled shrimp - 300 g;
  • onion feathers - a bunch;
  • peeled boiled squid - 4 carcasses;
  • light mayonnaise;
  • hard cheese - 200 g;
  • parsley;
  • salt to taste.

Chop the onion feathers into small pieces, chop the squid into strips. Grate the cheese on a coarse grater. Combine all the ingredients of the dish, add salt and pour mayonnaise. Use parsley to decorate the finished dish before serving.

From squid, pickles and eggs

We offer a slightly unusual combination of seafood with pickles below:

  • 2 squid carcasses;
  • 2 hard-boiled eggs;
  • small onion;
  • 3 medium pickled cucumbers;
  • a glass of sour cream.

Finely chop the onion, boil the squid carcasses and cut into large cubes. We also chop cucumbers and eggs. We combine everything and season with sour cream. Cucumbers add just enough saltiness to the dish, so there is no need to add salt. If desired, you can add a little ground pepper.

With cucumber, egg and corn

Incredibly tender and juicy squid salad with cucumber, egg and canned corn. The recipe will definitely not leave anyone indifferent!

  • fresh squid - 500 g;
  • canned corn — 1 bank;
  • eggs - 3 units;
  • onion - half a head;
  • mayonnaise - 1 table. l.;
  • sour cream - 1 table. l.;
  • salt - a couple of pinches;
  • black pepper

Boil the squid in advance, carefully peel the skin and cut into not very thick strips. Thinly slice the eggs into rings, and cut the onion into quarter rings.

Mix all the prepared ingredients in a salad bowl, add corn to them, season with sour cream and light mayonnaise. Add salt and pepper. Stir with a spoon. Cool in the refrigerator for a third of an hour.

How to properly cook squid for salad?

Properly boiled squids have a delicate taste, their flesh is soft and slightly juicy. It is recommended to purchase seafood carcasses in an unpeeled form - not so much for the sake of economy, but based on its taste and nutritional values. In production, as a rule, such a product is cleaned using special solutions, which cannot impart beneficial qualities to the product.

Cleaning the carcasses is very simple - the film is quite thin and can be quickly removed. If you try to remove it from a raw carcass, the skin will tear and may remain on the carcass in places.

You can speed up the process in this way:

  • put all the carcasses in a deep container;
  • boil water;
  • pour boiling water over the carcasses so that it completely covers the squid;
  • after a minute, drain the water and rinse off the remaining skin under cool running water, remove the insides and notochord (a chitinous vertebra).

Cleaned squids are ready for cooking.

There are several options for preparing this product:

  1. Place a pan of water on the stove, put one bay leaf and a little salt in it. As soon as the water starts to boil, place the squid in it and cook for 2-4 minutes. The duration of cooking is affected by the total number of squid carcasses. Remove the carcasses and place them in a container of ice water.
  2. Boil a large amount of water. Place the cleaned squids in a large container. Pour boiling water over for 3 minutes. Drain the water and rinse the carcasses with cold water. Carry out the entire procedure again.

Squid meat, like shrimp, is very tender in texture. Therefore, it does not require long-term heat treatment. Quite the contrary - if the product is cooked for too long, beneficial substances are lost, and the meat will become too tough, dense, and lose its tenderness.
