I think every housewife thinks about this. What's the first dish to cook today? And today I have soup with lazy dumplings on the menu! Like this! It turns out to be light and rich at the same time, and very satisfying, but at the same time no one will refuse the supplement!

Ingredients for a 6 liter saucepan:

  • Broth or water - 3 liters;
  • 300-400 grams of minced meat;
  • 2 carrots;
  • 1 onion;
  • 4 potatoes;
  • 1 tomato;
  • green onions, dill, parsley, salt, pepper to taste.
  • 100 ml warm water;
  • 1 egg;
  • salt, flour;
  • minced meat and 1 onion.

Soup with lazy dumplings. step by step recipe

  1. Knead the flour, water, salt and egg into a stiff dough and leave for 30 minutes.
  2. To fill the dumplings, mix the minced meat with grated onion, salt and pepper and set aside.
  3. Fry the onion for the broth in butter until golden, then add the grated carrots and diced tomato.
  4. Place vegetables in broth or water and bring to a boil.
  5. Grate the potatoes (large) and add them to the soup!
  6. While the vegetables are boiling, prepare lazy dumplings: to do this, roll out the dough into a layer, put the filling on it, but so that the edges remain without minced meat. Roll the dough with minced meat into a roll and pinch the edges. For convenience, the dough can be divided into 2-3 parts, and then roll each one out, so the rolls will come out smaller and will be easier to cut.
  7. So, cut the resulting rolls into pieces.
  8. Place the lazy dumplings in the soup and cook until they float. At the very end, add bay leaf and chopped herbs.

Turn off the soup, let it brew for 5-7 minutes and you can serve!

Without a doubt, dumplings are the top of Russian cuisine. The dish is the most delicious, and if you have frozen dumplings, a quick and satisfying dinner is guaranteed.

I try to make dumplings myself, because the word “homemade” acts like hypnosis on the household, even if my dough or minced meat didn’t turn out very well.

Of course, making dumplings takes a lot of time, but I found a way out a long time ago. If time is limited, and I’m just too lazy to bother for a long time, I speed up the process and make so-called lazy dumplings. Doesn't affect the taste, but much faster.

Lazy dumplings have one more advantage - you can add minced meat without sparing, which makes the dumplings much tastier.

I always make dumplings in reserve. I boil or fry some of it; by the way, fried lazy dumplings taste like pasties, and I freeze some of it.

And today I decided to combine the first and second courses, and boiled vegetable soup with lazy dumplings. The soup turned out rich, appetizing, but there’s no point in talking about the taste.

To make the dumpling dough plastic, soft, and most importantly, manageable, I never forget some secrets. First, I use only egg yolks for the dough and exclude the whites. Secondly, the water must be warm. It is the warm environment that contributes to the “flexibility” of the dough while rolling it out. The dough does not curl, but rolls out evenly. Third, to add plasticity, I don’t forget about sunflower oil.

And so, for the dough - 2 yolks, a tablespoon of any sunflower oil, a teaspoon of salt, half a glass of warm water, about 250 grams of premium flour. It may be a little more or less, it all depends on the stickiness of the flour and other factors.

Grind the yolks with salt, add oil and water, stir.


Gradually adding flour, kneading the stiff dough. The dough should not stick to your hands or cutting board.


I cover the finished dough and put it aside for 20-30 minutes so that all the components are finally revealed and combined.


You can mince the minced meat yourself, use any type of meat: pork, veal or chicken, or combine it.

For speed, I used ready-made minced pork and beef. For taste I added salt, ground black pepper, chopped herbs and, of course, half a glass cold water. Water will make the boiled minced meat juicy, which means appetizing and tasty.


Lightly dust the cutting table with flour, divide the dough into two parts and roll it into a thin pancake. The dough should be rolled out thinly, obedient, not sticky and hang freely on your hand. This dough makes wonderful homemade noodles for soup, but I make dumplings, so I’ll stop there.


I spread a thin layer of minced meat onto the rolled out dough (we also divide the amount into two parts).


And I roll the dough into a tube or roll, whichever you prefer.


I cut the sausage lengthwise into portions. Well, not beauty! The dumplings bloomed like roses in a garden bed.


I put most of it in the freezer, leaving 7-10 pieces (it all depends on the size of the dumplings) for soup.


I pour 1.5-2 liters of water into a saucepan and put it on the stove. While the water is boiling, I will prepare the vegetables.


I cut the potatoes into large strips, the garlic and carrots into cubes, and the onion into half rings. I chopped a few sprigs of herbs.


When the water boils, add potatoes and salt to taste.


After about 10 minutes, I lightly mashed the semi-boiled potatoes for the broth and added the vegetables. I decided to boil them rather than fry them. It’s tastier this way and the taste of the vegetables will be preserved. And for fat content, I added a couple of tablespoons of good butter into the broth.


I put dumplings, a laurel leaf into the prepared broth and wait for the dumplings to float.


I sprinkle the finished soup with herbs and can pour it into plates.


It turned out fast, tasty and satisfying!

The soup is truly gorgeous, provided that you make the lazy dumplings yourself and do not replace them (solely for convenience) with store-bought ones.

Recipe for vegetable soup with potatoes and lazy dumplings

To prepare the soup you will need:

For the dumpling dough:

  • Wheat flour – 3.5 cups
  • Chicken egg – 2 pcs.
  • Water – 200 ml
  • Salt - to taste

Dumpling filling:

  • Minced meat (chicken or combined) – 350 g
  • Onions – 2 onions
  • Salt and ground black pepper - to taste

To prepare the soup:

  • Potatoes – 4 pcs. (medium size)
  • Carrots – 2 pcs. (medium size)
  • Onion – 1 onion
  • Ghee butter – 1 tablespoon
  • Bay leaf – 1-2 pcs.
  • Dill – 1 bunch
  • Meat or chicken broth – 2.5 l
  • Bouillon cubes and/or salt - to taste

Prepare vegetable soup with lazy dumplings:

  1. Pour the sifted flour into a deep bowl, make a well in the flour, and add the whisked eggs.
  2. Dilute salt in warm water and add this water to the flour and eggs, knead the dough.
  3. Wrap the dough in film and leave it for 30 minutes.
  4. Divide the dough into 4 parts and roll each part into a layer. Place headlights on each layer (not thinly) and roll the dough into rolls. We cut the rolls crosswise with a sharp knife into thick “nickels”. Place our lazy dumplings on a floured board and put them in the freezer.
  5. Chop (finely) the onion and add it to the minced meat, salt and pepper the minced meat, mix everything well.
  6. We cut the potatoes into cubes, cut the onion into half rings, and cut the carrots into strips. Fry onions and carrots in melted butter.
  7. Pour the broth into a deep saucepan and bring it to a boil, add the potatoes and cook until half cooked, launch the lazy dumplings. At the end of cooking, add sauté, bay leaf, and bouillon cubes (if desired) into the soup.
  8. Sprinkle the finished soup with chopped green dill.
  9. Serve the soup with sour cream or a small amount of mayonnaise.
