Whoopie Pie Cake: recipe with different cream options. Whoopie pie cake with sour cream - an explosion of taste! How to make whoopie pie cake at home

Whoopie is a traditional American cookie. It consists of two chocolate biscuits glued together with a cream layer. This form led to the appearance of “Whoopie Pie” - a cake. A recipe with a photo of this sweet, which will take center stage on your holiday table, will be given below. Cooks characterize Whoopie cookies as airy, literally melting in your mouth. This is achieved through a cream made from a delicate Italian delicacy that is quite difficult to obtain in our conditions. Therefore, in this article we will give some ideas on how to replace cheese made from buffalo milk. Externally, American Whoopie cookies are similar to the French macaroon dessert. What should the cake look like? We will also give tips on decorating this “star of the show”.

Whoopie Pie Cake. Recipe, dough ingredients

The cookie that inspired American chefs to create the cake consists of two pieces of chocolate sponge cake. What connects them together It’s not hard to guess that the Whoopie Pie recipe suggests making a larger number of cake layers. Consequently, there will be more than one layer. We’ll talk about what to make the cream from for the “Whoopie Pie” cake (pie in English means “pie”). In the meantime, we are stocking up on ingredients for the cakes. We should prepare biscuit dough. Therefore, we will need wheat flour (three hundred and fifty grams), butter (250 g), regular sugar (210 g) and vanilla (bag), two eggs, half a glass of milk, a bag of baking powder, soda and salt on the tip of a knife. Our cakes will be chocolate. Therefore, we will prepare one hundred grams of cocoa powder and 130 g of coffee. We will extinguish the soda with lemon juice.

Making the dough

American cooks, unlike European cooks, do not like to bother. The step-by-step recipe for Whoopie Pie cake is very simple. The whole process will take you a little over an hour. Let us reassure those who have not yet prepared biscuit dough: it is also very simple. The main thing is to follow the instructions exactly. So, in a deep bowl we mix the bulk ingredients. Sift the wheat flour, add cocoa powder, salt and baking powder. The butter should be soft. Note, not melted, but at room temperature. Beat it with a mixer until creamy. Add sugar - regular and vanilla. Then add eggs. Turn the mixer to minimum speed. Pour in milk. At this stage, boil a small amount of water to brew coffee. Pour flour and cocoa into the butter-egg mixture. Knead. And pour half a glass of espresso close to boiling. The dough should have the consistency of thick sour cream. Culinary experts call it “like on pancakes.”

Baking cakes

The recipe suggests making the Whoopie Pie cake in three layers. To get the required number of cakes, the dough should be divided into 3 parts. This is easier than baking the cake and then cutting it into three longitudinal layers. But to save time (and gas in the oven), you can opt for the second option. So, we cover a round and preferably springform pan. Pour in a third of the dough or the entire mass. In the latter case, we must correctly calculate the cooking time. It is very possible that the surface will begin to burn, but the middle will remain damp. We put the form with the dough on a baking sheet, and that one in the oven. Whoopie cookies bake for about six minutes at a temperature of one hundred and sixty degrees. But these are small round pieces with a diameter of five centimeters. If we bake a crust, even with a third of the dough, we need to increase both the temperature and the baking time. Set the oven to one hundred and eighty degrees. We wait about half an hour. We check readiness with a match stick. When it comes out of the dough dry, it's ready. We take out the cakes and cool them.

Cream: how to replace mascarpone

It is said that Amish American Protestants came up with the Whoopie Pie recipe in the nineteenth century. Mascarpone cream was not yet widely used in the New World at that time. The Amish made a layer for chocolate cakes from full-fat cottage cheese, cream and powdered sugar. We can follow their example. But this cream can behave unpredictably and “float”. To prevent this from happening, we will try to fix its consistency with edible gelatin. Another option is unflavored cream cheese. You can make it sweet by mixing condensed milk and cream.

Cream recipe

Mix four hundred milliliters of very chilled cream (33% fat) with half a glass of sifted powdered sugar. Beat until you get a thick mass. Add two hundred and fifty grams of mascarpone cheese by spoon. In the case of the classic cream recipe, press the cottage cheese through a sieve. Mix it with powdered sugar. Add pre-whipped heavy cream. Coat the cakes with the resulting cream. The recipe suggests decorating the Whoopie Pie cake with chocolate icing. But first, the pie needs to sit in the refrigerator for an hour or two. For the glaze, melt a chocolate bar in a water bath. Spread it on the surface of the cake.

Such a sweetness as Whoopie Pie cake came to us from America. Now it is almost a traditional cookie, which is prepared at mass holidays and festivities in this country. Initially, this dessert was two cookies connected with a delicate cream, and now a cake is made under its name, which includes the same ingredients. We decided to do this so as not to spend a lot of time shaping the cookies, but to have more rest.

Today we will plunge into the world of American cuisine and make “Whoopie Pie” in the form of a cake, adhering to its classic recipe.

Until I myself started looking for and trying recipes for the popular dessert Whoopie Pie, I had no idea how simple and easy it is to make! Therefore, I am happy to share this simple and delicious recipe with you!

What is Whoopie Pie or Whoopie Pie?

Whoopie pie is one of the most popular American desserts, which consists of two biscuit halves with a delicate creamy layer. Outwardly, they are similar to French pasta, but different in taste and recipe.

For the test you will need:

  • 1 egg;
  • 115 grams of butter;
  • 240 grams of sugar;
  • 125 ml milk;
  • 210 grams of flour;
  • 3 tablespoons cocoa;
  • 60 ml hot water;
  • 1 teaspoon baking soda or baking powder.

For cream:

  • 340 grams of curd cream cheese;
  • 115 grams of butter;
  • 100 grams of powdered sugar;
  • Vanillin packaging.

How to make whoopie pie dough?

First of all, leave the butter in a warm room so that it melts on its own. Attention, the butter must not be heated or melted; it must melt and soften on its own.

Add a glass of sugar.

Beat softened butter with sugar.

Add the egg.

Beat the prepared mass.

Pour milk, add soda and flour. Stir.

Pour boiling water.

Add cocoa.

The dough should be quite elastic, like thick sour cream. My dough was a little liquid, so I added more flour afterwards.

Place small cakes on the parchment using either a spoon or a pastry bag.

Don't make them too close as they spread quite well. Bake for about 10 minutes at 160-180 degrees. You can check the readiness with a toothpick; if it remains dry when pierced, it means it’s ready.

How to make cream for Whoopie Pie?

For the cream you need to take softened butter, cold cream cheese and powdered sugar.

Beat everything well. If you wish, you can add vanillin.

The cream turns out airy, aromatic, tender and incredibly tasty!

Now assemble the Whoopie Pie - spread cream on one half and cover with the other half on top. It is better to leave the cakes in the refrigerator for 3-5 hours to soak.

The cakes turned out soft, fragrant, tender, creamy and incredibly delicious!

And most importantly, they are very simple and easy to prepare!

Take note of this simple, proven recipe and treat yourself and your loved ones to delicious home cooking!

God himself ordered the cake to be prepared.

I prepared the Whoopie Pie cake in high speed mode, since the guests were almost on the doorstep.

The decoration is the most primitive, for home tea drinking.

The biscuit is very tender and chocolatey. The cake is incredibly delicious. If you don't want to bother with cakes, prepare a big cake, you won't regret it.

Remove the butter from the refrigerator in advance.

Add eggs, mix thoroughly.

Add flour and milk little by little, mixing well each time.

You should get a homogeneous, smooth dough.

Grease a mold (20 cm) with butter. Lay out the dough.

I took some dough to make small cakes for decoration.

Bake the biscuit at 180 degrees for 40-50 minutes.

For cream, be sure to use 33% cream. This time 25% whipped well for me, but then lost its shape.

Whip the cream with powdered sugar into a strong, stable cream. I took some cream for small cakes.

Do not try to cut a hot biscuit, it is very tender and will fall apart. Let it cool completely on a wire rack.

Cut the biscuit into three parts. Spread half of the cream on the bottom layer.

Cover with the second cake layer and add the rest of the cream. Cover with a third and put the Whoopie Pie cake in the refrigerator.

For the glaze, mix all ingredients. Boil over medium heat, stirring constantly, until smooth. Cool and pour over the cake. Decorate as desired.

This cake does not need to be soaked; you can enjoy it right away.

Bon appetit.

Dense, textured after baking, the cakes promise a chocolate taste familiar from childhood, and the delicate creamy layer beckons in contrast with dark cookies.

It’s no joke, several American states jealously defend the right to be called the homeland of this delicacy. Oh, not in vain!

National treasure

Massachusetts, New Hampshire, Pennsylvania and Maine claimed that Whoopie Pie was invented on their territory. A real regional war! The residents of the last two states have the most serious arguments. Patriotic Pennsylvanians recall that a local candy factory made Whoopie Pies back in the 1920s. True, the official name is “ Whoopie pie" It came into use only in 1928. And this gives Maine natives a formal advantage: according to them, the city of Lewiston has been baking Whoopie Pies since 1925.

The amusing confrontation resulted in Maine legislators designating Whoopie Pie as the “official treat of the State of Maine.” A little funny, very touching, but, in essence, this is an excellent illustration of a simple idea: in America they not only value their regional identity, but also really love Whoopie Pie.

“Hey, hey, pie!”

At the same time, no one doubts that the German Amish brought the cookie recipe to the States. The Amish are a kind of Protestant Old Believers who live a simple life and honor the traditions of their ancestors. Most of their communities moved to North America back in the 18th and 19th centuries.

According to legend, Amish men, tired from hard work, unwrapped a package of food and, finding a Whoopie Pie there, joyfully cried out: “Whoo! Pie! Over time, this is how the cookies came to be called.

Therefore, if you are suddenly puzzled by translating the name of a delicacy into Russian, you will have to choose between the funny names “Whoa, pie!”, “Wow, cake!” and “Hey, hey, pie!” In order to experience such emotions, you just need a Whoopie Pie recipe.

The second, more common name is translated unambiguously: “Black Moon.”

What, what are our cookies made of?

“Uh, so cake, pie, brownie or cookie?” If your head is spinning from the merry carousel of terms, it’s no surprise. Whoopie Pie is also notable for the fact that its “racial identity” is extremely difficult to determine.

In appearance - a cookie or cake similar to the titanic size of Choco-Pie. The second part of the name hints that this was intended as a pie. And eyewitnesses who were lucky enough to try the “Black Moon” in its historical homeland testify that sometimes one cake can feed two adults of immodest size - and eat the cake.

So, you can act according to the situation. Let's call a smaller whoopie pie a cookie or a cake. If you baked something king-size, it would be a pie or a cake.

However, rearranging the letters will not change the composition. And it has little variety in the classic “Black Moon”. The original recipe calls for chocolate chip cookies and buttercream frosting. Over time, modifications with gingerbread and pumpkin cookies have become popular, and it is not forbidden to experiment with the filling.

And, of course, I really want to try this.
